- 6 large eggs, organic, pasture, raised, hard boiled and peeled
- 1/2 cup mayonnaise
- 1/2 teaspoon curry powder
- 1 teaspoon pickle relish
- 1 teaspoon minced onion
- Salt and pepper, to taste
- Chop eggs into a bowl.
- Mix with mayo, curry, pickle relish, onion and salt and pepper to taste.
- Place in a bowl and cover. Refrigerate up to a week.
