With the summer season in full swing, there’s nothing better than a summertime barbeque. Many people look forward to having grilled meat from the barbeque, but cooking on the grill goes beyond the basic hamburger and hotdog, especially when you add some wood to the mix. For instance, cooking on a cedar plank is one way you can mix up your BBQ menu, and the results taste lovely!
Are you new to plank cooking? This Native American technique is a delicious way to cook meat, vegetables, as well as fish. Cooking on a cedar plank imparts a subtle smoky flavor, and also helps protect your food from burning or sticking to the grill. Luckily, cedar planks are relatively easy to find as many hardware, and culinary specialty stores often have them in stock.

Maple Glazed Cedar Plank Salmon Recipe
• 1 cedar plank, untreated
• 2 ½ pound salmon fillet, with the skin
• 1 cup maple syrup
• 2 Tbsp. water
• 4 Tbsp. lemon juice
• 2 cloves of garlic, minced
• 2 tsp peeled gingerroot, finely grated
• 2 tsp coriander, ground
• 2 Tbsp. ghee or butter
• Olive or Coconut oil
• Himalayan pink salt (adjust to taste-optional)
• Fresh ground pepper (adjust to taste-optional)
1. Soak the cedar plank in water for 2-3 hours before grilling in a baking dish. You can place a mug or a plate on top to help keep the plank submerged in the water.
2. Preheat the grill to medium heat.
3. In a small saucepan, heat ginger, garlic, maple syrup, water, coriander, salt, pepper, and the butter together over medium-high heat. Stir until slightly thickened. Then stir in the lemon juice, set it aside and let cool.
4. Remove plank from water and gently pat dry. Place the cedar plank on the grill rack, and keep it there for 10 minutes or until lightly charred.
5. Once plank is lightly charred, turn the plank over and lightly oil it. Place the salmon skin side down on the charred side, and then, using only half of the mixture, brush the first half of the fish with the glaze.
6. Grill the salmon, covered, for about 20-30 minutes or until your salmon is firm and slightly golden on top.
7. Remove from grill, and spread the remaining glaze over the salmon.
8. Cut the salmon fillet into equal portions and enjoy!
