Recipe: Bottom’s Up Friday Funster Cocktail: The Silver Cloud Mojito

The Silver Cloud Mojito RecipeLike many traditional bar drinks, the classic Mojito one does NOT rely not on icky sweet sugary soda or fruit juices. It’s just rum with fresh mint and lime, some seltzer and a sweetener.  Work your way across bars in the Caribbean and you’ll see mojitos of every stripe. The traditional ones begin by muddling a LOT of fresh mint in the bottom of a pilsner glass with a tablespoon of sugar. But, here’s the good news. You can substitute stevia for that sugar with no adulteration of the flavor. You’ll get a bright, refreshing drink. It just says party,  and it won’t wreck your diet.

1/2 cup fresh mint leaves

1 packet stevia

juice and zest of 1 lime

2 ounces golden rum (we like Bacardi)

crushed ice

seltzer water

So easy. Add mint and sweetener to the bottom of a pilsner glass. Smash up the mint with a muddler (which looks like its been stolen from your mom’s mortar and pestle). Add lime juice, zest, and rum and muddle some more. Now add crushed ice to the top of the glass and top up with cold seltzer. What could be simpler than that?
