Here’s a wonderful warming winter dessert I know you’ll love. And so easy. And the secret is, its made with Asian yam noodles which have no carbs and no calories. Yahoo. If your asian market doesn’t have these noodles shaped like Orzo, you have a couple choices, just use regular noodles and cut them into small pieces, using kitchen shears, or order from www.miraclenoodle.com. I could not diet with out shirataki noodles. They fill me up. They do no harm. What’s not to love?
Warm Faux Rice Pudding
Serves 6

1 cup shiritaki noodles shaped as Orzo (also sold as Miracle Noodles)
1 1/2 cups light cream
3 egg whites
2 eggs
artificial sweetener to taste (we like about 3 packets stevia)
1 tsp vanilla
1/4 tsp cinnamon

Preheat oven to 325 F. Coat custard cups with butter. Rinsenoodles under running water for 2 minutes. Drain well and dab with paper towels to remove all excess water.

Combine egg whites, egg, cream, Stevia and vanilla. Beat until combined but not foamy. Stir in orzo and cinnamon. Place six 6-oz custard cups in a 9×13″ baking dish. Divide mixture among cups. Place baking dish on an oven rack. Pour hot water into baking dish around custard cups to a depth of 1″. Bake 40 minutes or just until set. Stir after 20 minutes and serve.
