Chicken Alsace
Makes 4 servings
1 whole organic chicken (about 3 1/2 pound), cut into 4 pieces
1 tablespoon extra virgin olive oil
3 tablespoons unsalted butter, divided
4 medium leeks (white and pale green parts only), finely chopped (2 cups)
2 tablespoons finely chopped shallot
4 medium carrots, halved diagonally
1 cup dry white wine
1 small head cauliflower, broken into florets
2 tablespoons finely chopped flat-leaf parsley
1/2 cup heavy cream
Fresh lemon juice to taste
Preheat oven to 350o..Pat chicken dry and sprinkle with salt and pepper. Heat oil with 1 tablespoon butter in a wide heavy ovenproof pot over medium-high heat and brown chicken in 2 batches, turning once, about 10 minutes total per batch. Transfer to a plate.
Brown leeks, shallots and carrots in pan drippings, then add wine, cauliflower and chicken back to the pot. Cover and cook until chicken is tender, about 1 hour. Transfer chicken to a serving dish. Add cream and lemon juice to the pan and heat to make a sauce. Adjust seasonings and serve in a bowl beside the chicken. .
