Recipe: The Drunken Fool

OK. You know you want it. The dessert that’s so rich and yummy you don’t know whether to eat it or to roll in it.  The combination of luscious berries macerated in your favorite triple distilled spirit; rum, bourbon, scotch, gin, or vodka is just too much fun. Fold that fruit into whipped cream. Swirl into a martini glass. What’s not to love? The aroma jumps up to your nose before you take the first bite.  Did anyone say seconds? Although you may think about a second serving, pause a moment. Look out into the middle distance. Now you know you’re satisfied.

makes 4 servings

2 cups fresh berries + more to garnish, left whole (choose raspberries, blackberries, blueberries, or strawberries)
2 tablespoons distilled spirits (rum, bourbon, or what ever you adore)
1 cup heavy cream
1 teaspoon vanilla extract
Sugar substitute to taste
mint leaves for garnish
Put 2 cups of berries in the blender or food processor. Add a small amount of sweetener and the distilled spirit. Pulse to mix.

Whip cream with vanilla and about 2 teaspoons of sugar equivalent.

Spoon a tablespoon or so of raspberry puree in the bottom of a martini or wine glass or clear dessert dish.

Swirl the rest of the puree in with the whipped cream, leaving wide streaks of color and various shades of pink or purply blue throughout.

Spoon into dessert dishes and garnish with the rest of the berries. Garnish with a sprig of mint.
