Surely one of God’s Gifts to the world of cuisine, and certainly a fabulous addition to a low-carb diet, having only 4 grams carbs per 1/2 cup serving. So I snatched up a couple cans. Next to that were big logs of Velveeta cheese – er cheese food. Now, I have not purchased this product in more than 40 years, and I can’t tell you why I did, because I am way too much of a food snob to eat it, I can’t be chowing down on dips and chips, so what was I thinking?
Came home, taking the Velveeta out of the plain brown wrapper, I read the label and discovered that a one-ounce piece (what we recommend for a cheese serving) has only 3 grams carbohydrate, 6 grams of fat and 370 mg. sodium. Not bad actually. So I mixed an ounce with 1/2 cup Rotel and zapped it for a minute. Hmm. Looked quite cream-soupy. Added some fiber-rich shiritaki noodles* and a cup of fresh baby spinach** and nuked it again. Stirred.
Do not tell anybody you are eating this for your low carb lunch. It’s fantastic. You get a cream soup with a jolt of fresh spinach, tomatoes, peppers and noodles. Totally satisfying, and kept me feeling full and content for hours, with only 8 grams of carb, 6 grams of fat, and a healthy hit of vitamins A, C, calcium, and iron. I figure the gods will forgive me for using Velveeta when they see the phyto-nutrient dense spinach, tomatoes, and peppers. And those fiber-rich Shiritaki noodles? Surely I get a pass for these ingredients.
Well, to hell with orthodoxy. This is a delicious soup and I’d eat it diet or not. It’s ready in 3 minutes. It’s flavorful, and I liked it. So there.
Velveeta Soup with Rotel Tomatoes, Spinach, and Shiritaki Noodles
1 ounce Velveeta cheese food
1/2 cup Rotel original diced tomatoes and green chilies
1/2 cup shiritaki noodles
1 cup fresh spinach
Combine in a soup bowl the velveeta and Rotel tomatoes. Nuke in the microwave on high for 1 minute. Stir to mix then add noodles and spinach. Cover and nuke 1 minute. Stir. Eat it for lunch. Now don’t tell anybody about this. It can be our diet secret.
