Recipe: Faux Potato Salad. OK. It’s Cauliflower. You’ll Get Used to it.

Faux Potato Salad Recipe

The Farmer’s Market is Groaning with Organic produce these days. Yesterday, I bought a humongous cauliflower.  Such a beautiful flower. Well named. And delicious too.

1  head cauliflower
4 hard-cooked eggs, peeled and coarsely chopped
1 medium stalk celery, minced (including leaves)
½ cup chopped green pepper
2 green onions, chopped (green and white parts)
1/2 cup real mayonnaise (Hellman’s is good)
1 tablespoon dijon mustard
2 tablespoons sugar-free pickle relish or dill relish, or chopped sugar-free pickle
sea salt and and cracked black pepper
fresh dill and/or parsley,  chopped  (optional)
paprika

Break cauliflower into florets. Microwave florets in a covered container with a small amount of water, or steam on the stove just until fork tender (about 4 minutes.) Drain and put into a large bowl. Toss with chopped egg, celery, green pepper and onions. Mix the ingredients for the dressing. Taste for the balance of flavors you like. Mix the chopped vegetables and the dressing into the cauliflower and egg mixture. . Garnish with the herb, or sprinkle with paprika. Cover and chill.
