A party fave for Footballers, this healthy topping can lift a chicken breast, slice of pork roast or fish fillet to new heights!
Makes 20 ¼ cup servings
- 3 tablespoons chopped fresh cilantro
- 3 tablespoons red wine vinegar
- 2 tablespoons extra virgin olive oil
- 2 tablespoons extra virgin olive oil
- Hot sauce to taste, shake it on good
- 1 garlic clove smashed
- 2 15.8 oz. cans black-eyed peas, rinsed and drained
- 1 ½ cups diced onions
- 1 cup diced seeded tomato
- 1 cup diced red, green and/ or yellow bell pepper
Toss all ingredients together in a large bowl. Cover and refrigerate.
