Makes 8 servings
• 2 pounds’ flank steak
• Kosher salt to taste
• Cracked black pepper to taste
• 1/4 cup fresh lime juice
• Grated zest from 1 lime
• 2 tablespoons extra virgin olive oil
• 6 cloves garlic, smashed
• 1 teaspoon (or to taste) crushed red pepper
• 1/2 teaspoon of salt
• Lime wedges for garnish
Score flank steak and put it in a zip lock bag. Add remaining ingredients, zip it up, and marinate 30 minutes on the counter or up to 8 hours in the refrigerator.
When ready to cook, heat the grill and cook 4-5 minutes on each side. Rest on a cutting board and then cut into thin slices. Serve garnished with additional lime wedges.
